Check out a program called SnortCenter. Its not the best but it will get the job done. You will have to stick with Snort 2.0.0 thought. Check out www.snort.org <http://www.snort.org> in the documentation section for some setup guides as well. Someone else on the list might be able to recommend something different to manage the newer versions of snort.
