Default Installed MySQL - updating charsets

Dear Group,

I have a simple question, which answering will clear all my problems.
If I have such Variable values in MySQL 'show variables' output like:

character_set_client latin1
character_set_connection latin1
character_set_database utf8
character_set_filesystem binary
character_set_results latin1
character_set_server utf8
character_set_system utf8
character_sets_dir /usr/local/share/mysql/charsets/
collation_connection latin1_swedish_ci
collation_database utf8_general_ci
collation_server utf8_general_ci

MySQL version: 5.0.45

And I'd like to update all non-utf8 values (ie. latin1 into utf8, or
latin1_swedish_ci into utf8_general_ci), what is the easiest way to do
so? Shall I recompile with special arguments?

you can start your server with an argument like this:
mysqld --character-set-server=urf8
at the server level. you can also control any single databases's character set at
the database creation time and/or after it is created. all and all, character set
and collation is all the way controllable to the level of attribute (field) of any
given table.
