Mysql server - memory problem -

Hi,

On a mysql server I've a lot of mysql in the TOP and it take almost all
memory.
Where in config file can I set the number of mysql are run ?
How can I be sure that when a user stop to use mysql, the process is kill ?

Thanks for your help. I'm a noob in mysql administration and I need help.
