Completely unrelated to postfix, and ...

As far as I know, fetchmail is only a POP client, not a server, which explains
why you can't find any information about setting it up as a server. It can run
in the background and fetch your mail every n seconds, but it doesn't accept
connections on port 110 from the outside world and act as a server.
