What is not clear is how this will help me in this specific case? Are you
trying to tell me it's Outlook's fault for not adding that "." and that
therefore it is a Microsoft issue and not a Postfix issue?

If so, I'll be more than happy to continue this with Bill's people...

What is not clear about the following text:

After the SMTP DATA command, the client must prepend "." to
message lines that start with ".".
