Default postfix local?

I've set up a server to play with. I'm trying to make Postfix work for a
intranet with no internet connectivity. Plan is to learn as much as I can
before using it for email delivery.

Unfortunately I am a little confused. When I mean local, I mean the local
network. I would like to use the linux "mail" program to receive things
like the server's logs at my workstation.

So far all I have been able to do is send and receive mail on the server
system itself and telnet to postfix from my work station. That is to say,
I've got the basics working.

When I try to send from my workstation I am notified that there is no
file /usr/sbin/sendmail. I reading everything I can find but its not making
much sense since none of the material seems to be specific to my present
needs.

Can anyone give me a clue?
