By parsing the log files, I suppose. A delivery to the remote mail server is
logged like this:

Mar 7 19:19:13 commodore courieresmtp:

A delivery to a local mailbox is logged like this:

For remote deliveries, the return address could lie, I suppose, so it may or
may not be good enough.
