How have you installed Courier? Did you build your own from the tarball, or install packages that someone else provided? As for "other mail related programs", while I'm not familiar with the default package set in Ubuntu, I would expect that alternatives would not conflict with Courier, so long as they aren't running. In other words, unless you observe an actual conflict, don't worry about them.
