Take a look at SpamAssassin. (http://www.spamassassin.org)

If all you want to do is sort the mail into inbox and spam, you can run
spamassassin from a maildrop script.

If you want to be able to reject high-scoring messages, take a look at
Amavisd-new. (http://www.ijs.si/software/amavisd/) It acts as a filter for
the incoming email and can run SpamAssassin and virus scanners on every
message before the mail server even accepts the message.
