Yes, you can disable FAM support by making sure Courier can't find the
FAM libraries at build time (sorry, there is no configure option for
this). On RedHat based systems this means removing FAM/gamin devel libs
and modifying the .spec file of courier so that it doesn't look for them.

BTW, the error probably means that the FAM daemon has died or was not
started on your box. Making sure FAM is running/installed should solve
this error.
