Yes. I have wierd setups where there are a handful of users using
exchange/outlook in an organization and 500 pop3 users who only access email off
the courier filter/server. In order for the exchange users to accurately email
the courier users on the other server I set exchange to automatically relay
through the courier box. It's in:

Exchange system manager/
Servers/
{servername}/
Protocols/
SMTP/
Default SMTP Virtual Server Properties/
Delivery Tab/
Advanced Delivery (button)/
Add the fqdn for your smart host

If you didn't get vertigo from going this deep in the menus you should have what
you're looking for. YMMV.
