I changed the default:
TCPDOPTS="-stderrlogger=/usr/sbin/courierlogger"

To:
TCPDOPTS="-nodnslookup -noidentlookup -stderrlogger=/usr/sbin/courierlogger"

And it appears to be much quicker to send email through the server now.
Although I am not sure I like that solution, as it reduces functionality of
esmtpd. Decisions decisions...
