So the bottom line is you are saying that there is no problem sending
mail to spam@example.it, but when you attempt to quarantine mail to
that address, sendmail is unable to deliver messages to it.

What, if anything, have you set:
$spam_quarantine_method
to?

If you have set this to something, try commenting it out so
amavisd-new uses the default.

Is there evidence of amavisd-new errors in maillog (or whatever your
mail log is called)?

grep Error /var/log/maillog
